Ingredients

2 lbs pork roast
4 tablespoons olive oil
7 cans chicken broth
13 cups water
1 large yellow sweet onion
1 head garlic
3 anaheim chilies
3 medium tomatillos
4 serrano chilies
1 can stewed tomatoes , with juice
6 chopped green chilies
2 tablespoons ground cumin
1/2 teaspoon oregano
1/2 teaspoon cayenne pepper
1 cup flour
The Pork Green Chili (Colorado Style) is a classic southwestern dish that packs a flavorful punch. Instructions

1.Preheat the oven to 375°F.
2.Rub the pork roast with 2 tablespoons olive oil and place it in a large roasting pan. Roast for 2 hours or until the internal temperature reaches 160°F.
3.Remove the roast from the pan and let cool. Once cool, shred the pork and set it aside.
4.In a large pot, add the remaining 2 tablespoons of olive oil and sauté the chopped onion, garlic, Anaheim chilies, tomatillos, and serrano chilies for 5 minutes.
5.Add in the chicken broth, water, stewed tomatoes, chopped green chilies, ground cumin, oregano, cayenne pepper and bring to a boil. Reduce heat and let simmer for 30 minutes.
6.In a small bowl, whisk together the flour and 1 cup of water until smooth. Slowly pour the flour mixture into the chili, stirring to prevent clumps, and simmer for an additional 10 minutes.
7.Add the shredded pork and simmer for an additional 30 minutes.
8.Serve hot and enjoy!
