1/2 - 1 lb boneless pork loin , diced ( depends on just how meaty you want it )

1 chorizo sausage ( I used about 6 oz . )
1 bell pepper ( seeded and chopped )
3/4 cup white wine
7 ounces diced tomatoes
1 can black beans
3/4 cup corn
1 pinch saffron
1 teaspoon paprika
2 tablespoons chopped fresh parsley

9 ounces cornmeal
2 teaspoons fast rising yeast
1 teaspoon caster sugar
9 ounces all-purpose flour
1 teaspoon salt
1 cup warm water ( scant )
2 tablespoons oil
2 eggs , beaten
1 egg , for glaze

Instructions

1.In a large skillet, heat 3 tablespoons of olive oil on medium heat.

4.Add the bell pepper, diced tomatoes, white wine, black beans, corn, paprika, saffron, salt, and pepper. Mix well and cook for 10-15 minutes until the sauce is thick and bubbly. Stir occasionally to prevent sticking.
5.In another bowl, mix the cornmeal, yeast, caster sugar, all-purpose flour, and salt. Add the warm water, beaten eggs, and oil. Mix until the dough is smooth and elastic.
6.On a lightly floured surface, knead the dough for a few minutes. Roll the dough out into circles about 6 inches in diameter. Place a tablespoon of filling onto each circle. Fold the dough over and seal the edges by pressing with a fork.
7.Beat the remaining egg and use it to glaze the empanadas. Place them on a baking sheet and bake at 375°F for about 20-25 minutes until golden brown.
