225 g white mushrooms or 225 g brown button mushrooms
2 mcintosh apples , diced
125 ml cider or 125 ml dry white wine
50 ml 15 % cream
salt and pepper
2 tablespoons chives , chopped

Instructions

1.Trim pork tenderloin of any excess fat, cut into 1/2 inch slices and pound until 1/4 inch thick.
2.Season with salt and pepper.
3.In a large skillet, melt 2 tablespoons of butter and brown the pork cutlets, 2-3 minutes per side. Transfer to a warm platter.
4.In the same pan, add 2 tablespoons of butter and cook the shallots and sliced mushroom until they are golden, for 3 to 4 minutes.
5.Add diced apples and cider or wine to the pan. Continue cooking until the liquid has reduced by half, around 4-5 minutes.
6.Finally, add cream, chives, salt, and black pepper to taste.
7.Add the pork cutlets back to the skillet to heat through for another minute then serve.
