3 tablespoons vegetable oil plus 1 tablespoon butter
1 1/4 cups tomato sauce
1 teaspoon brown sugar , to taste
1 teaspoon dried onion flakes
1/2 teaspoon dried oregano , divided
1/2 teaspoon additional dried basil
1 teaspoon minced garlic or 1/2 teaspoon garlic powder , to taste
4 slices mozzarella cheese or 4 slices provolone cheese
freshly grated parmesan cheese

Instructions

1.In a shallow dish, mix flour, lemon zest (if using), salt, and black pepper. In another shallow dish, beat eggs and water. In third shallow dish, mix breadcrumbs, grated parmesan cheese, and dried basil.
2.Dip pork cutlets or chicken in flour mixture, shaking off excess flour. Dip in egg mixture, then coat in breadcrumb mixture.
3.Heat oil and butter in large frying pan over medium heat until hot. Cook cutlets until golden brown and cooked through, about 3 minutes per side. Remove from pan, and place on baking dish lined with paper towel.
4.Preheat oven to 350 degrees F (175 degrees C).
5.In a saucepan over medium heat, mix together tomato sauce, brown sugar, onion flakes, 1/4 teaspoon oregano, basil and garlic. Simmer for about 10 minutes.
6.Arrange cutlets in single layer in 9x13 inch baking dish. Spoon tomato sauce over cutlets and spread to cover. Sprinkle with remaining 1/4 teaspoon oregano. Top each with slice of mozzarella cheese or provolone cheese.
7.Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly. Serve hot with a sprinkling of freshly grated parmesan cheese.
