Ingredients

4 boneless pork chops
1 tablespoon shortening ( can be replaced by canola oil )
2 -3 beef hot links ( or similar )
2 onions ( chopped )
2 tomatoes ( diced , skin removed )
1 green bell pepper ( chopped )
1/4 cup water
1 tablespoon sweet paprika
1/4 teaspoon caraway seed
1 pinch hot paprika ( optional )
salt and pepper

Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.Melt shortening (or canola oil) in a large skillet over medium-high heat.
3.Add pork chops, and brown on both sides. Remove from skillet and place in a baking dish.
4.Slice the beef hot links (or similar) and sauté in the same skillet until lightly browned. Add the chopped onions, diced tomatoes, and chopped green bell pepper. Cook for 5-7 minutes, stirring occasionally.
5.Add water, sweet paprika, caraway seed, hot paprika (if using), salt, and pepper to the skillet. Stir and simmer for 2-3 minutes.
6.Remove from heat and pour mixture over the pork chops in the baking dish.
7.Cover with foil and bake for 30-35 minutes, until pork chops are fully cooked.
8.Serve hot over rice or with crusty bread.
