2 tablespoons rice bran oil
4 garlic cloves , finely chopped
1 onion , finely chopped
2 tablespoons ginger , peeled and grated
3 tablespoons white miso
1 1/2 cups king brown button mushrooms , sliced in half
3 quarts chicken stock
5 scallions , sliced whites separated from greens
2 teaspoons chili paste
2 teaspoons sesame oil
4 servings of fresh wheat noodles
4 eggs
2 tablespoons soy sauce
2 lbs pork belly
1/3 cup salt
1 tablespoon pepper
2 tablespoons black sesame seeds
Pork Belly Ramen is a popular Japanese dish that has become a favorite worldwide. Instructions

1.Preheat the oven to 350°F (175°C).
2.Take a baking sheet and line it with aluminum foil. Spread salt and pepper on all sides of the pork belly and place it on the sheet. Bake for 1 hour.
3.In a large pot, heat the rice bran oil over medium heat and add the garlic, onion, and ginger. Cook for 5 minutes.
4.Add the white miso and mushrooms and cook for an additional 5 minutes until the mushrooms are soft.
5.Pour in the chicken stock and bring to boil. Add the whites of the scallions, chili paste, and sesame oil.
6.Cook the fresh wheat noodles according to the package instructions.
7.In another pot, bring enough water to boil and add the eggs, cooking for 6-7 minutes. Once done, let them cool and peel them.
8.When the pork belly is done, slice it into cubes and add it to the soup.
9.Divide the noodles into four bowls and pour in the soup. Top with sliced green onions, black sesame seeds, soy sauce, and an egg.
