Ingredients

1 teaspoon canola oil
1/4 cup hoisin sauce
1/4 cup ketchup
1 teaspoon low sodium soy sauce
1/2 teaspoon minced garlic ( fresh or bottled )
1/8 - 1/4 teaspoon ground red pepper ( for heat )
1 lb pork tenderloin , trimmed cut into 1/4-inch pieces
1 teaspoon fresh ground black pepper
1/4 teaspoon salt
2 teaspoons dark sesame oil
1/2 cup presliced button mushroom
1/2 cup presliced red bell pepper
1/2 cup sliced water chestnuts ( I used canned )
1 teaspoon bottled ground fresh ginger ( I used Spice World )
1/2 cup chopped green onion
1 teaspoon toasted sesame seeds
Pork and stir-fried vegetables is a classic dish in many Asian cuisines. The stir-fry method of cooking makes it an easy and quick meal to prepare, perfect for busy weeknights. Instructions

1.In a small bowl, stir together canola oil, hoisin sauce, ketchup, low sodium soy sauce, minced garlic and ground red pepper.
2.Heat a large skillet over medium-high heat. Add pork, black pepper and salt to the skillet and cook for 4 minutes or until the pork is lightly browned.
3.Add dark sesame oil, sliced mushroom, sliced red bell pepper, sliced water chestnuts and ground ginger, stir, and cook for another 3 minutes or until vegetables are tender.
4.Stir in green onions and the sauce. Cook for another 2 minutes or until heated through. Stir to coat pork and vegetables with sauce.
5.Garnish with sesame seeds and serve hot.
