Ingredients

1 lb ground pork
1 package frozen chopped spinach , thawed , squeezed dry
1/4 cup thinly sliced green onion
1 tablespoon soy sauce
1 tablespoon dark sesame oil
2 teaspoons minced fresh ginger
3/4 teaspoon salt
1/2 teaspoon sugar
36 round gyoza skins
2 -3 tablespoons vegetable oil
1 1/2 cups water , divided

Instructions

1.In a large bowl, mix together the ground pork, chopped spinach, green onion, soy sauce, sesame oil, ginger, salt, and sugar.
2.Lay out your gyoza skins and place 1 teaspoon of filling in the center of each skin.
3.Dip your finger in water and trace around the edge of the gyoza skin with your finger until it is wet.
4.Fold the gyoza skin over the filling, forming a half-moon shape, and pinch the edges together to seal the potsticker closed. Repeat with remaining gyoza skins.
5.Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat and add half the potstickers. Cook for 2-3 minutes until the bottoms are browned and crisp.
6.Slowly pour in 3/4 cup of water and immediately cover the skillet with a lid, reducing the heat to medium-low. Cook for 8-10 minutes until the filling is cooked through and the water has evaporated.
7.Remove the lid and continue cooking until the bottoms of the potstickers are crispy again. Transfer to a platter and repeat with remaining potstickers.
