Ingredients

500 g kumara ( coarsely )
1 tablespoon vegetable oil
salt and pepper ( to taste )
600 g pork ( forequarter chops )
200 g vermicelli rice noodles
1 lebanese cucumber ( thinly sliced )
1/4 cup coriander ( leaves )
1/4 cup mint ( shredded )
1 1/2 tablespoons lemon juice
1 1/2 tablespoons chili sauce ( sweet )
3 teaspoons fish sauce
lemon wedge ( to serve )
This Pork and Kumra (Sweet Potato) Salad is a fusion of flavors inspired by Southeast Asian cuisine. The sweetness of the kumara is balanced by the zesty lemon juice, sweet chili sauce, and fish sauce, while the fresh herbs and cucumber provide a refreshing crunch. The roasted kumara and tender pork make this salad a hearty and satisfying meal that's perfect for a quick lunch or dinner. This recipe serves four people and can be easily adapted to suit your taste preferences.

Instructions

1.Preheat the oven to 200 degrees Celsius and line a baking tray with baking paper.
2.Place the kumara on the tray, drizzle with oil and season with salt and pepper. Toss to coat and bake for 25-30 minutes or until tender.
3.Season the pork chops with salt and pepper, then cook in a frying pan over medium-high heat for 4-5 minutes per side or until cooked through. Set aside to rest for 5 minutes.
4.Cook the noodles according to packet instructions and set aside to cool.
5.In a large bowl, combine the sliced cucumber, coriander leaves and shredded mint. Add the cooked kumara, noodles, lemon juice, sweet chili sauce and fish sauce. Toss to combine.
6.Slice the rested pork chops and add to the salad.
7.Serve with a wedge of lemon.
