Ingredients

4 1/2 - 5 lbs celery & leaves , cut into 1-inch pieces
3 lbs pork , cut into 1 inch cubes
1/2 cup butter
3 medium onions , chopped
2 lemons , juice of
2 eggs
1 tablespoon cornstarch ( cornflour )
salt & freshly ground black pepper
Pork and Celery Avgolemono is a traditional Greek recipe that is usually served as a soup, stew or sauce. Instructions

1.In a deep pot, melt the butter over medium heat.
2.Add the pork and saute for 5-6 minutes until both sides are well browned.
3.Add the onions and celery and saute for another 8-10 minutes until the vegetables are softened.
4.Add 2 cups of water and season with salt and black pepper to taste.
5.Bring to a boil, then reduce the heat and simmer covered for 1-1½ hours until the pork is tender.
6.In a separate bowl, whisk the eggs with cornstarch until smooth.
7.Gradually add the lemon juice while whisking constantly.
8.Slowly pour the egg mixture into the pot while stirring continuously.
9.Increase heat to medium and stir for 2-3 minutes until the soup thickens.
10.Serve hot with your favourite bread or rice.
