Ingredients

2 1/4 pounds boneless pork , cut into bite-sized pieces
2 tablespoons soy sauce
1/2 lemon , juiced
2 pounds pork liver
3 tablespoons olive oil
2 potatoes , quartered
2 tablespoons olive oil
1 onion , chopped
2 cloves garlic , minced
2 large tomatoes , diced
1 green bell pepper , cut into chunks
salt and ground black pepper to taste

Instructions

1.In a mixing bowl, marinate the pork in soy sauce and lemon juice for 30 minutes.
2.Heat olive oil in a large pan and fry the pork until brown. Remove from the pan and set aside.
3.In the same pan, add more oil and stir fry the potatoes. Remove from the pan and set aside.
4.In the same pan, sauté onions and garlic until fragrant.
5.Add tomatoes and cook until soft.
6.Add the fried pork and liver. Cook for 5 minutes until the liver is browned.
7.Add the bell pepper and potatoes. Season with salt and pepper. Cover and simmer for 15 minutes.
