1 can chicken broth
1 cup arborio rice
3/4 cup shallot , chopped
2 garlic cloves , minced
1/2 cup dry white wine
1/4 cup parmigiano-reggiano cheese , grated
1/4 cup cream cheese
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
Porcini Mushroom Risotto is a classic Italian dish that combines creamy risotto rice with earthy, meaty porcini mushrooms. The rice is cooked slowly in chicken broth, white wine, and seasonings until it has a creamy consistency. Instructions

1.In a small bowl, combine the boiling water and dried porcini mushrooms. Allow them to sit for about 20 minutes until softened.
2.In a medium saucepan, heat the chicken broth over medium heat until hot.
3.In a large saucepan, heat the olive oil over medium-high heat. Add the chopped shallot and minced garlic, and sauté for about 2 minutes until softened.
4.Add the arborio rice to the large saucepan with the shallot and garlic. Toast the rice for about 1-2 minutes until it becomes slightly translucent.
5.Pour in the white wine and stir continuously until the wine is fully absorbed.
6.Using a ladle, add the hot chicken broth to the rice mixture one ladle at a time, stirring continuously until the broth is fully absorbed before adding the next ladle. Repeat until the rice is cooked to your liking and has a creamy consistency.
7.Remove the saucepan from heat and stir in the softened porcini mushrooms (with the water), grated parmigiano-reggiano cheese, cream cheese, thyme, salt, and black pepper until everything is evenly combined.
8.Serve hot and enjoy!
