Ingredients

8 pounds bone-in pork butt ( shoulder ) roast
1/2 cup olive oil , divided
1/4 cup kosher salt , divided
2 tablespoons ground black pepper
1/2 onion , finely chopped
10 cloves garlic , slivered , divided
2 tablespoons chopped fresh dill weed
2 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh parsley
1/4 cup red wine
1 bunch broccoli rabe , trimmed and chopped
2 red bell peppers , chopped
24 hard rolls
1/2 pound sharp provolone cheese
Originating in central Italy, porchetta is a popular Italian street food that is traditionally made with a whole suckling pig that is stuffed with herbs and roasted over an open flame. Porchetta Italiano is a simplified version of this dish that uses a bone-in pork butt (shoulder) roast instead. The meat is rubbed with a mixture of salt, pepper, and olive oil, then stuffed with garlic and a herb mixture before being slow-roasted in the oven. This dish is often served with broccoli rabe, red bell peppers, hard rolls, and sharp provolone cheese, along with a red wine sauce for dipping or drizzling.

Instructions

1.Preheat oven to 450F.
2.In a small bowl, mix together 1/4 cup olive oil, 2 tablespoons salt, and 2 tablespoons black pepper.
3.Rub the pork roast all over with the salt and pepper mixture and set aside.
4.In a food processor, combine the onion, 8 cloves of garlic, dill, rosemary, parsley, and remaining olive oil.
5.Process until well combined.
6.Make slits in the pork roast and stuff with the remaining garlic slivers.
7.Rub the herb mixture all over the pork roast.
8.Place the pork on a rack in a roasting pan and roast for 25 minutes.
9.Reduce the oven temperature to 325F and continue to roast for an additional 2 hours, or until the internal temperature of the pork reaches 160F.
10.While the pork is roasting, heat the red wine in a small saucepan.
11.Once the pork is cooked, let it rest for at least 10 minutes before slicing.
12.Serve the pork with the wine sauce, broccoli rabe, red bell peppers, hard rolls, and sharp provolone cheese.
