Ingredients

16 ounces water-packed firm tofu
3 tablespoons canola oil
kosher salt
4 large shallots , minced
1 1/4 lbs jicama , grated
3 garlic cloves , minced
2 tablespoons dark miso
2 tablespoons sugar
18 boston lettuce leaves or 18 red leaf lettuce
1/3 cup unsalted dry roasted peanuts , chopped
2 cups bean sprouts
hoisin sauce
Asian chili sauce
Popiah is a traditional Malaysian recipe also known as spring rolls. The dish features jicama as the main ingredient and is unique in its way of serving. Here, instead of deep-frying, we serve them as delicate spring rolls with fresh crisp lettuce. The rolls are then served with two dipping sauces, hoisin, and Asian chili sauce. The combination of sweet jicama, protein from tofu, the crunch of peanuts, bean sprouts, crisp lettuce, and sauces makes for a perfect appetizer.

Instructions

1.Drain water from the tofu and use paper towels to absorb any excess water.
2.Cut the tofu into small strips and fry until golden brown.
3.Season with salt.
4.Heat the oil in a large skillet over medium-high heat.
5.Add the shallots and garlic to the pan and cook for 2-3 min.
6.Add the jicama and stir-fry until it's soft.
7.Add the miso, sugar and 1/4 cup of water.
8.Stir-fry for 3 to 5 min.
9.Remove the pan from heat and let it cool.
10.Lay a lettuce leave flat and spread a tablespoon of hoisin sauce.
11.Add some of the jicama mixture, tofu strips, peanuts, and bean sprouts.
12.Fold the lettuce and roll into shape.
13.Repeat until all fillings are used.
14.Serve with hoisin and chili sauce.
