Ingredients

2 beef bouillon cubes or 1 tablespoon loose beef bouillon granules
1 large yellow onion
10 -12 baby carrots
1 lb ground beef
2 potatoes ( optional )
salt
pepper
1/2 - 1 cup water

Instructions

1.In a large skillet, brown the ground beef over medium-high heat.
2.Add the chopped onion and baby carrots and continue cooking for 5-7 minutes or until the vegetables have softened.
3.Add the beef bouillon cubes or granules and stir until they have dissolved.
4.If desired, add peeled and cubed potatoes at this time.
5.Season with salt and pepper to taste.
6.Pour in 1/2-1 cup water depending on how thick you want the stew to be.
7.Bring to a boil and then reduce heat to low.
8.Simmer for 10-15 minutes or until vegetables are softened and the meat is cooked through.
