4 tomatoes , firm
1/3 cup dry breadcrumbs , can use Italian seasoned crumbs
3 tablespoons parsley , minced
1 garlic clove , minced
1 1/4 teaspoons salt
1/4 teaspoon fresh ground black pepper
1/4 cup olive oil

Instructions

1.Preheat the oven to 375°F (190°C).
2.Cut the tops off the tomatoes and discard them.

4.In a mixing bowl, combine breadcrumbs, parsley, garlic, salt, black pepper, and olive oil.
5.With a spoon, fill the tomatoes with the breadcrumb mixture until they are overflowing and the top is level with the opening of the tomato.
6.Place the filled tomatoes in a baking dish and bake for 25-30 minutes, or until the topping is golden brown.
7.Remove from the oven and let cool for a few minutes before serving.
