Instructions

1.In a medium saucepan, whisk together heavy cream, whole milk, sugar, cornstarch, and salt until smooth
2.Place the saucepan over medium heat and cook, stirring constantly until the mixture thickens and boils
3.Add in pomegranate juice, pomegranate liqueur, and lemon juice
4.Cook, stirring occasionally, until the mixture thickens again
5.Remove from heat and allow to cool to room temperature before chilling for at least 4 hours, or overnight
6.Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions
7.Add pomegranate seeds during the last minute of churning
8.Transfer the gelato to a container and freeze for at least 2 hours before serving
