1 large garlic clove , peeled and finely minced
1 1/2 tablespoons honey
1 tablespoon cumin seed , toasted
1 teaspoon dried oregano
1 chicken , cut into serving pieces
4 banana leaves , passed over a burner to soften
1 tablespoon corn oil
3 roma tomatoes , finely chopped
1 small green bell pepper , seeded , deviened , chopped
1 medium onion , chopped
Pollo Ticul is a traditional Yucatecan dish, originating from the small town of Ticul in Mexico. Instructions

1.In a large bowl, whisk together the achiote paste, bitter orange juice, minced garlic, honey, toasted cumin seed, and dried oregano.
2.Add the chicken pieces to the marinade and toss them well to coat. Cover the bowl and refrigerate for at least 2 hours or overnight.
3.Preheat the oven to 350°F. Lay out the banana leaves on a clean work surface, then place a few pieces of chicken and some chopped tomatoes, green peppers, and onions in the center of each leaf. Fold the leaves around the chicken like a package and secure with toothpicks.
4.Heat the oil in a large skillet over medium-high heat. Add the chicken packets, seam-side down, and cook for about 5 minutes, until the leaves start to char.
5.Transfer the packets to a baking dish and bake for 30 to 35 minutes, until the chicken is cooked through and the vegetables are tender.
