Ingredients

4 boneless skinless chicken breasts ( I like to use chicken tenders ) or 12 boneless skinless chicken thighs ( I like to use chicken tenders )
1/3 cup fresh lemon juice
1 teaspoon kosher salt
1 teaspoon dried whole Mexican oregano , rubbed to a powder
3 garlic cloves , minced
1 tablespoon olive oil
1 tablespoon ground guajillo chile
3 tablespoons sugar
1/4 teaspoon kosher salt
refried beans
fresh corn tortilla , warmed
guacamole
pico de gallo
Pollo Lucas Tacos, or Chicken Tacos, are a popular dish in Mexico. This recipe gives the chicken a flavorful twist with the use of Mexican oregano and guajillo chile. Instructions

1.Preheat your grill to high heat
2.In a large bowl, mix together lemon juice, kosher salt, Mexican oregano, garlic cloves, and olive oil to form a marinade
3.Add chicken tenders to the marinade and coat well. Let it sit in the fridge for at least one hour or until ready to grill
4.In a small bowl, mix together the ground guajillo chile, sugar, and kosher salt. Set this spice mixture aside
5.Grill the chicken tenders for about 3-4 minutes on each side until charred and cooked through
6.Sprinkle the spice mixture generously over grilled chicken tenders
7.To assemble the tacos, smear refried beans on each warm corn tortilla, add a few pieces of chicken, and top with fresh guacamole and pico de gallo
