Pollo Capri is a classic Italian-American dish that is usually served at Italian restaurants. It consists of a chicken breast that is filled with a mixture of sautéed mushrooms, herbs, and cheese. The dish gets its name from the Italian island of Capri, which is famous for its fresh seafood, tomatoes, and lemons. However, the dish does not contain any seafood or tomatoes. Instead, it is inspired by the rustic and hearty cuisine of southern Italy, which emphasizes seasonal ingredients and bold flavors. Pollo Capri is a comforting and satisfying dish that is perfect for a chilly evening or a special occasion.
