Ingredients

2 lbs chicken , cut into serving pieces
1 cup flour
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil
1 onion , chopped
2 -3 garlic cloves , minced
2 cups porcini mushrooms ( optional ) or 2 cups other mushrooms , chopped ( optional )
1 cup white wine or 1 cup red wine
1 cup tomatoes , chopped
2 cups water or 2 cups chicken stock
1/4 cup parsley , chopped
2 teaspoons fresh rosemary , chopped
1 teaspoon thyme
salt and pepper

Instructions

1.Combine 1 cup flour, 1 teaspoon salt and 1/2 teaspoon pepper in a plastic bag. Add chicken pieces, one at a time and shake.
2.Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides.
3.Add chopped onion, minced garlic and mushrooms, if using. Cook for 5 minutes, stirring occasionally.
4.Pour in 1 cup wine to deglaze the pan. Stir well and let cook for 1-2 minutes.
5.Add 1 cup chopped tomatoes, 2 cups water or chicken stock, 2 teaspoons chopped fresh rosemary, 1 teaspoon thyme and salt and pepper to taste. Stir well and bring to a boil.
6.Lower heat and simmer for 30-40 minutes, until chicken is tender.
7.Garnish with chopped parsley before serving.
