Instructions

1.In a large Dutch oven or pot, heat 1 tablespoon of vegetable oil over medium-high heat.
2.Add onion and garlic, and cook until fragrant and onion is translucent.
3.Season chicken pieces with 1 1/2 teaspoons of salt and 1/4 teaspoon of white pepper.
4.In the same pot, add 1 teaspoon of vegetable oil and brown chicken pieces on both sides.
5.Add 1/2 cup of dry white wine, scraping the bottom of the pot to release browned bits.
6.Stir in chopped tomatoes, tomato sauce, tomato paste, sweet peas, paprika, chili powder, remaining 1/4 teaspoon of white pepper, and remaining 1/4 teaspoon of salt.
7.Simmer over low heat for 40 minutes, stirring occasionally.
8.Stir in remaining 1/4 cup of dry white wine and green olives, and simmer for another 20 minutes.
9.Serve hot over rice or with crusty bread.
