1 large poblano chile
1 clove garlic , chopped

1 cup monterey jack cheese , shredded
1/2 cup half-and-half

Instructions

1.Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add diced chorizo and cook until browned, about 3-4 minutes.
2.Remove chorizo from skillet and transfer it to a plate lined with paper towels to drain excess oil.
3.Heat remaining vegetable oil in the skillet. Add chicken breasts and cook until they are browned on both sides, about 4-5 minutes per side.
4.Remove chicken from skillet and transfer to a plate.
5.In the same skillet, add chopped onion, garlic, and sliced bell peppers. Cook vegetables until they are tender, about 5 minutes.
6.Add sliced poblano chile and ground black pepper to the skillet. Cook for another 2-3 minutes.
7.Return chicken and chorizo to the skillet and mix with the vegetables.
8.Pour half-and-half and sour cream over the chicken mixture, stirring well to combine.
9.Simmer the chicken mixture for about 5 minutes until the sauce is thickened.
10.Finally, sprinkle shredded Monterey Jack cheese over the top of the chicken mixture. Cover the skillet with a lid and cook for another 2-3 minutes, or until the cheese is melted. Serve hot.
