Ingredients

1 1/2 lbs smoked kielbasa
6 eggs
8 cups water
2 tablespoons butter
4 garlic cloves , minced
4 leeks , white and light green parts only sliced into thin rounds
2 baking potatoes , peeled and diced
1/4 cup flour
1 1/2 cups sour cream
1/4 cup prepared horseradish
kosher salt , & freshly ground black

Polish White Borscht is a traditional Polish soup often served during holidays and special occasions. The soup is creamy with a slightly sour taste that comes from the sour cream and horseradish. The soup is usually made with kielbasa and potatoes, which make it hearty and filling. Instructions

1.In a large pot, simmer the kielbasa in 8 cups of water for 30 minutes.
2.Remove the kielbasa from the pot and set aside.
3.In a separate pot, melt the butter over medium heat and add the minced garlic and leeks. Saute for 3-5 minutes until softened.
4.Add the potatoes to the leek and garlic mixture and stir. Pour in the kielbasa water from the other pot.
5.Bring the mixture to a boil, then reduce heat and let simmer for 10-15 minutes.
6.Whisk the flour and 1 cup of water together in a bowl, stir into the soup, and let cook for 5 minutes.
7.In a separate bowl, beat the 6 eggs and 1/2 cup of sour cream together.
8.Temper the egg mixture by slowly pouring half of the hot soup into the bowl, whisking constantly. Then pour the egg mixture back into the pot with the rest of the soup.
9.Slice the kielbasa into rounds and put back into the soup.
10.Stir in the remaining sour cream and horseradish into the soup.
11.Season with salt and pepper to taste. Serve hot and enjoy!
