Polish Sourdough Rye Bread is a traditional bread that has been enjoyed in Eastern Europe for centuries. It is made with a combination of rye and bread flour, which gives it a dense and chewy texture, and a distinctive nutty and sour flavor. This bread is perfect for breakfast, served toasted with butter and honey or paired with smoked salmon and cream cheese on a bagel. It is also a great addition to any sandwich or soup, as its robust flavor can stand up to bold flavors and spices.

Instructions

.In a small bowl, dissolve the yeast and sugar in 1/2 cup of warm water.
.In a separate large bowl, combine the rye flour and 1 1/2 cups of warm water. Mix well and let it sit for at least 2 hours to allow the natural fermentation process to begin.
.After 2 hours, add the yeast mixture, buttermilk, baking soda, salt, and caraway seed to the rye flour mixture. Mix well.
.Add the bread flour 1 cup at a time, stirring with a wooden spoon until the dough becomes too stiff to stir by hand.
.Turn the dough onto a floured surface, and knead for about 8 minutes or until elastic.
.Place the dough in a greased bowl, cover and let it rise for about 2 hours in a warm place until it doubles in size.
.Punch the dough down and shape it into two loaves. Place them on a greased baking sheet and let them rise for another hour.
.Preheat the oven to 375 degrees F. Slash the top of each loaf with a sharp knife and bake for 35-40 minutes, or until the crust is golden.
.Cool the loaves on a wire rack for at least 30 minutes before slicing and serving.
