2 apples , medium
5 tablespoons oil , for frying ( I use canola )
100 ml non-fat vanilla yogurt

Instructions

1.In a large bowl, mix together the flour, salt, baking powder, and sugar.
2.Add in the skim milk and eggs. Whisk until well combined and a smooth batter is formed.
3.Core and slice the apples or peaches. Set aside.
4.Heat the oil in a large skillet over medium heat. Once hot, pour roughly 1/4 cup of batter into the skillet for each pancake.
5.Place 3-4 slices of apple or peach on top of the batter. Once bubbles start to form on the surface of the pancake, flip it over and cook for an additional 1-2 minutes on the other side.
6.Transfer the pancakes to a plate and repeat with the remaining batter and fruit slices.
7.Serve hot with a dollop of non-fat vanilla yogurt.
