Ingredients

1 1/2 lbs cherry tomatoes , cut in half lengthwise
3 tablespoons olive oil
salt & freshly ground black pepper
2 cups milk
1 1/2 cups water
3 cups cornmeal
1 1/2 teaspoons salt
3 tablespoons butter or 3 tablespoons olive oil
1/2 cup grated parmesan cheese
1 cup soft fresh goat cheese
1/2 cup fresh basil , chopped
1/2 cup toasted pine nuts

Instructions

1.Preheat the oven to 400°F.

3.While the tomatoes are roasting, combine the milk, water, cornmeal, and salt in a large heavy-bottomed saucepan.
4.Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
5.Add the butter or olive oil, parmesan cheese, and goat cheese, and stir until the cheese melts and the mixture is smooth.
6.Spread the polenta on a platter or in a shallow bowl.
7.Top with the roasted tomatoes, fresh basil, and toasted pine nuts, and serve immediately.
