Ingredients

2 tablespoons butter
1 medium onion , peeled and chopped
3 cups water
1/2 teaspoon salt
1 cup polenta
5 stalks swiss chard , leafy greens coarsely chopped and stalks chopped
1/2 cup grated parmesan cheese
2 -3 tablespoons tomato paste
1/2 cup grated gruyere cheese
Polenta is a popular dish in Italian cuisine that has been around for centuries. It is made from boiled cornmeal and served as a base for many dishes. In this recipe, we have added Swiss chard to make it healthier and flavorful. Swiss chard is rich in vitamins and minerals, and its leafy green texture compliments the creamy and hearty polenta. Instructions

1.Set the 2-QT pressure cooker to sauté mode and heat butter.
2.Add the onions and sauté until soft.
3.Add water, salt, and polenta into the cooker.
4.Turn off the sauté mode and switch to pressure cook mode. Cook for 7 minutes.
5.Allow the pressure cooker to release the pressure naturally for 5 minutes.
6.Once released, open the cooker and mix in the chopped swiss chard and tomato paste.
7.Switch to sauté mode again and cook for 5 minutes or until the Swiss chard is wilted.
8.Garnish with grated Parmesan cheese and Gruyere cheese.
