8 large plum tomatoes , ends trimmed , each tomato cut crosswise into 3 slices
1/2 teaspoon sugar
4 tablespoons extra virgin olive oil
3/4 cup kalamata olive , pitted and cut in half
1/2 cup freshly shredded parmesan cheese

Instructions

1.Bring the water to a boil. Add salt and ground pepper.
2.Gradually stir in the polenta. Reduce the heat to low, and cook, stirring often, until the mixture is thick and pulls cleanly away from the sides of the pot, 20 to 30 minutes.
3.Add butter, oregano and stir until the butter is melted and the mixture is creamy.
4.Spread the cooked polenta onto a greased sheet and let cool.
5.Preheat the oven to 375 °F and roast the tomatoes for approximately 15 minutes
6.Drizzle olive oil over the cooled polenta and cut it into circles. Top with roasted tomatoes, kalamata olives, and parmesan cheese.
7.Bake for 12-15 min and serve hot
