Ingredients

1/4 cup olive oil
1/2 cup unsalted butter
2 carrots , finely chopped
1 stalk celery , finely chopped
1/2 cup bacon , finely chopped
1 cup raw veal , finely chopped
1/2 cup dry white wine
1 lb ripe tomatoes or 1 lb canned tomato
salt and pepper
1 1/2 ounces dried mushrooms
1/4 lb chicken giblets
3 cups cornmeal
5 ounces parmesan cheese , half grated , half very thinly sliced

Instructions

1.Heat oven to 375°F.
2.For the filling, heat the oil and butter in a large saucepan and sauté the chopped carrots, celery, bacon and veal over a low heat for 20 minutes, stirring occasionally.
3.Add the white wine, raise the heat and cook, uncovered, until the liquid has evaporated, about 10 minutes.
4.Mash the tomatoes through a food mill and mix with the sautéed meat.
5.Season with salt and pepper to taste, and then add the mushrooms and chicken giblets to the mixture.
6.For the pastry, combine the cornmeal with 10 cups cold water in a large saucepan and cook over low heat, stirring constantly, for 45 minutes, or until the mixture is soft and smooth.
7.Remove from heat and add the grated cheese, again stirring constantly.
8.Spread half of the grated cornmeal in the bottom of a well-greased 9-inch cake tin and smooth the surface.
9.Pour the filling over the top, distributing it evenly and leaving a small margin around the edge of the pie.
10.Level surface and cover with the remaining grated cornmeal.
11.Arrange the sliced cheese on top, and smooth out to cover any exposed filling.
12.Bake for 1 hour, and allow to cool for 15 minutes before slicing.
