Ingredients

250 g quick-cooking polenta
25 g butter
2 tablespoons sunflower oil

Instructions

10.Add the tomatoes, creamed coconut, and brown sugar and simmer for 10-12 minutes or until the sauce thickens.
11.Stir in the pineapple and cook for an additional 2-3 minutes.
12.Serve the polenta dumplings with the pineapple sambal on top.
