150 g instant polenta
1/2 teaspoon salt
1 teaspoon ground nutmeg
1 tablespoon butter
50 g grated fresh parmesan cheese
15 ounces artichoke hearts , canned
50 g sun-dried tomatoes packed in oil
100 g salami , sliced
60 toothpicks
Polenta Artichoke Cubes offer an unusual twist to the traditional Italian (cornmeal) Polenta dish. The recipe features polenta, sun-dried tomatoes, salami, and canned artichoke hearts mixed in a delightful combination with Italian seasonings and Parmesan cheese. These cubes are excellent finger food and are perfect for appetizers. Quick and easy to make, these cubes can be prepared with an array of different ingredients. Instructions

1.Boil 650 mL water in a large pot and add salt to it.
2.Stir in the instant polenta and ground nutmeg into the boiling water.
3.Cook for around 5 min till it gets thick and pulls away from the pan, stirring frequently. Take it off the stove and add the butter, sun-dried tomatoes, and half cup grated parmesan cheese.
4.Slice the salami into thick wedges, and cut the artichoke hearts into small pieces. Prepare the polenta mixture alongside the sliced salami and artichokes.
5.Mix in the artichokes and salami to the polenta mixture and let it cool down for a bit.
6.Grease a 6 1/2-inch square baking pan with Italian dressing. Transfer the polenta mixture to the pan, pressing it down firmly. Sprinkle another half cup grated parmesan cheese on top.
7.Cover with plastic wrap and refrigerate for at least one hour.
8.Cut the refrigerated polenta into cubes. Skewer each cube with a toothpick and serve.
