Ingredients

1 teaspoon active dry yeast
1 pinch sugar
1/2 cup water
1/2 cup unbleached all-purpose flour
3 cups unbleached all-purpose flour
2 tablespoons unbleached all-purpose flour

1 -2 cup unsalted butter , at room temperature , pliable but still firm
2 eggs
1 1/2 cups crumbled feta cheese
1 lightly beaten egg
1/3 cup chopped fresh parsley or 1/3 cup dried parsley
1 egg yolk
1 tablespoon cream or 1 tablespoon milk

Instructions

1.In a bowl, dissolve the yeast and sugar in water, let it stand for 5 minutes until foamy.
2.Then, add in 1/2 cup of flour and mix until smooth. Cover and let stand in a warm area for 30 minutes until it doubles.
3.In a mixing bowl, combine the remaining 3 cups of flour and salt, then add in the yeast mixture.
4.Add in the butter and eggs and knead the dough for 10 minutes or until it becomes smooth and elastic.
5.Divide the dough into small portions. Then, fill each portion with feta cheese, parsley, cream and beaten egg. Close the dough balls carefully to avoid the stuffing from coming out.
6.Preheat the oven to 350°F. Brush the dough balls with egg wash. Bake for 25-30 minutes until they become golden.
