Ingredients

1 1/4 cups warm water
1 tablespoon active dry yeast
2 tablespoons white sugar
4 cups all-purpose flour
4 eggs , lightly beaten
1/4 cup butter
2 1/2 teaspoons salt
1/2 cup milk
3 cups raisins
1 quart vegetable oil
Poertzelki are a traditional Polish pastry made of dough and raisins that are deep-fried until golden brown. These donuts are crispy on the outside and fluffy on the inside, making them the perfect treat for any occasion. While they may not be the healthiest option due to their high calorie and fat content, they are sure to satisfy your sweet tooth.

Instructions

1.In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
2.Add flour, beaten eggs, melted butter, salt, and milk to the yeast mixture. Mix well to form a soft dough.
3.Turn the dough out onto a floured surface and knead for about 8 to 10 minutes, or until smooth and elastic.
4.Place the dough in a greased bowl, turning to grease the top. Cover and let rise in a warm place until doubled in size, about 1 hour.
5.Punch down the dough, and knead in the raisins.
6.Heat 2 inches of oil in a deep-fryer or large cast-iron skillet to 375 degrees F (190 degrees C).
7.On a lightly floured surface, roll the dough out to 1/2 inch thick and cut into diamond shapes.
8.Fry a few Poertzelki at a time in the hot oil, turning once, until golden brown. Drain on paper towels and serve warm.
