Ingredients

3/4 lb unpeeled medium raw shrimp
5 tablespoons olive oil , divided
1 large poblano pepper , halved and seeded
1 large onion , chopped
1 tomatoes , chopped
1/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup sour cream
8 corn tortillas
1 can green enchilada sauce
1 1/2 cups shredded monterey jack cheese
Enchiladas are a classic Mexican dish that can be enjoyed with various fillings. The Poblano Shrimp Enchiladas are a spicy and creamy version of this comforting dish. The filling includes plump shrimp, earthy poblano peppers, and tangy onions smothered in a thick layer of cheese and sour cream. These enchiladas make for a satisfying dinner for the whole family, and the leftovers taste even better the next day.

Instructions

1.Preheat oven to 375°F.
2.Peel the shrimp and discard shells. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and cook the shrimp lightly for 2-3 minutes.
3.Remove the shrimp from the pan and set aside. In the same skillet, heat another 2 tablespoons of olive oil over medium heat. Add poblano pepper and onions and cook, stirring occasionally, for 10 minutes or until the onions become translucent.
4.Stir in the chopped tomatoes, salt, oregano, cumin, and pepper. Cook for another 5 minutes, while stirring occasionally.
5.Stir in the sour cream and shrimp until well combined.
6.Pour the enchilada sauce into a baking dish. Spoon the shrimp filling into the center of each tortilla before rolling them up. Place each rolled tortilla seam side down in the baking dish.
7.Top the enchiladas with shredded cheese, then bake for 20-25 minutes until cooked through and the cheese is melted.
8.Once cooked, remove from the oven and let cool for at least 5 minutes before serving.
