Ingredients

10 poblano peppers
1 lb ground turkey
1 onion ( diced )
1 red pepper ( diced )
1 teaspoon olive oil
4 garlic cloves
4 ounces diced green chilies ( canned )
14 1/2 ounces diced tomatoes with green chilies
2 teaspoons cumin
2 teaspoons Mexican chili powder
1 teaspoon coriander
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon pepper
1 cup 2 % cheddar cheese
Poblano Chili Turkey Casserole is a perfect comfort food for spice lovers. The dish is a fusion of Mexican and American flavors that makes it unique in its own way. Instructions

1.Preheat the oven at 350 degrees Fahrenheit.
2.Roast poblano peppers on a preheated grill for 5 minutes on each side until skin is evenly blistered and charred.
3.Place the roasted peppers in a large ziplock bag, seal it and let it sit for at least 10 minutes.
4.Once the peppers are cooled, carefully peel them and remove the seeds and stems. Cut the peppers into thin slices.
5.Saute ground turkey and onion in a large skillet with a teaspoon of olive oil until the turkey is cooked.
6.Add diced red pepper, green chilies, minced garlic to the skillet and saute for 3-4 minutes
7.Add diced tomatoes with green chilies, cumin, Mexican chili powder, coriander, cayenne pepper, salt, and pepper and stir well. Let the mixture simmer for 5 minutes.
8.Transfer the mixture into a casserole dish and spread it evenly. Top it with sliced poblano peppers and 2% cheddar cheese.
9.Bake for 20-25 minutes or until cheese is golden brown.
