Ingredients

4 salmon fillets
1 cup fish stock
250 g light sour cream
1 lebanese cucumber ( coarsely grated )
2 tablespoons dry white wine
2 teaspoons tarragon ( chopped plus leaves to serve )
800 g baby potatoes ( quartered )
1 tablespoon extra virgin olive oil ( to drizzle )

Instructions

1.Preheat the oven to 200°C.
2.Arrange the quartered baby potatoes on a baking tray, drizzle with olive oil and season with salt and pepper. Bake in the oven for around 25-30 minutes until golden and crispy.
3.Meanwhile, pour the fish stock, dry white wine and chopped tarragon into a large saucepan and bring it to a gentle simmer on a medium heat.
4.Season the salmon fillets with salt and pepper, carefully add them to the saucepan, cover with a lid and simmer for around 8-10 minutes, or until just cooked through.
5.In a small bowl, mix together the light sour cream and grated cucumber and set aside.
6.Once the salmon and potatoes are cooked, remove them from the heat and allow the salmon to cool for a few minutes. Place the cooked potatoes on a serving platter and gently place the salmon fillets on top. Finish the dish by spooning the cucumber sauce over each fillet and garnishing with extra tarragon leaves if desired.
