24 oysters , shucked
2 cups champagne or 2 cups prosecco
4 tablespoons chopped shallots
2 cups cream
4 tablespoons crumbled Stilton cheese
salt and pepper
1 -2 tablespoon chopped parsley

Instructions

1.In a saucepan, sauté the shallots in champagne or prosecco over medium-high heat until reduced to about 2 tablespoons.

3.Whisk in Stilton cheese until melted and smooth, then season with salt and pepper.
4.To poach the oysters, bring a large pot of water to a boil over high heat.
5.Reduce heat to low and gently drop in oysters.
