Ingredients

4 free range eggs
1 teaspoon apple cider vinegar or 1 teaspoon any other light vinegar
4 cups water
4 tablespoons chicken broth or 4 tablespoons vegetable broth
2 cans black beans , drained
1 medium onion , minced
4 medium garlic cloves , chopped
2 teaspoons ground cumin
1 1/2 tablespoons red chili powder
2 tablespoons chopped fresh cilantro
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup salsa ( prepared )
2 cups shredded romaine lettuce
1 large avocado , cubed

Instructions

1.In a large pot, mix the water and chicken broth or vegetable broth. Add salt and bring it to a boil
2.Add apple cider vinegar to the pot and stir the water
3.Crack an egg into a small bowl, then gently drop it into the pot. Repeat with the remaining eggs. Poach the eggs until the whites are set and the yolks are still runny. This should take around 4 minutes
4.In a saucepan, fry onion and garlic on medium heat until they turn golden brown
5.Add black beans, cumin, red chili powder, salt and pepper and cook for 8 more minutes
6.Divide the shredded lettuce into four different plates and put 1/4 of the bean mixture on top of the lettuce
7.Top off each plate with one poached egg, 1/4 cup of salsa and diced avocado. Finish by sprinkling some chopped fresh cilantro on top
