150 g plain sweet biscuits
80 g butter , melted
825 g dark plums in heavy syrup
2 packets cream cheese
2 tablespoons plain sifted flour
1/2 cup sour cream
1 tablespoon grated orange , rine
1 tablespoon Grand Marnier
3 eggs , beaten lightly
3/4 cup caster sugar
2 tablespoons sliced almonds
This Plum and Orange Baked Cheesecake is a delicious and unique twist on traditional cheesecake, with plums and orange adding fruity flavor to the rich and creamy cheesecake. Instructions

1.Preheat oven to 180°C (160°C fan-forced). Grease a 22cm springform pan, line base and side with baking paper.
2.Process biscuits in a food processor until mixture resembles fine breadcrumbs. Add melted butter, process until well combined.
3.Using a straight-sided glass, press biscuit mixture over base of prepared pan. Refrigerate for 10 minutes until firm.
4.Drain syrup from plums into a small saucepan. Arrange plums over biscuit base. Reserve 6 plum halves for decoration. Cook syrup over medium heat for 8-10 minutes until reduced to 1/3 cup.
5.Beat cream cheese, flour, sour cream, rind, Grand Marnier, eggs and sugar in a medium-sized bowl with electric mixer until smooth. Stir through syrup. Pour mixture over plums. Scatter with remaining sliced almonds.
6.Bake for 50-60 minutes, until cheesecake is set around edge and wobbly in centre.
7.Turn off oven. Cool cheesecake in oven with door slightly ajar. Refrigerate cheesecake until firm. Serve with whipped cream and top with reserved plums.
