Ingredients

3/4 lb pancetta , sliced as thick as bacon
1/4 cup chopped fresh basil
1/4 cup mayonnaise
8 large slice country bread
unsalted butter , at room temperature
12 slices tomatoes
fresh ground black pepper
1 romaine lettuce hearts , separated into leaves
The Plt: Pancetta, Lettuce and Tomato Panini is a classic lunch sandwich that is popular in the United States. This sandwich is a perfect combination of salty, crispy pancetta, refreshing lettuce leaves, and juicy tomato slices, all nestled between two slices of bread slathered with basil-mayonnaise spread. Instructions

1.Heat a large skillet over medium heat.
2.Add pancetta slices and cook until crispy and browned, for about 5 minutes.
3.Remove from heat and transfer pancetta to paper towels to drain excess oil.
4.In a small bowl, mix together the basil and mayonnaise.
5.Spread softened butter on one side of each slice of bread.
6.On the other inside slice of bread, spread the basil-mayonnaise mixture.
7.Arrange 3 tomato slices over the basil-mayonnaise mixture, and season with black pepper.
8.On top of the tomatoes, add 2-3 pancetta slices and a few leaves of lettuce.
9.Top with the other slice of bread with the butter side facing the outside.
10.Heat a large skillet over medium heat. Place the sandwiches in the skillet and cook until they are golden brown and the cheese is melted, approximately 4-5 minutes per side.
