Ingredients

4 chicken breasts
4 cups water
1 teaspoon salt
2 ripe plantains
1/2 teaspoon cinnamon

Instructions

1.Preheat oven at 375F.
2.Place chicken breasts in a large pot, add water and salt to it, and boil it for 8-10 minutes or until thoroughly cooked.
3.While the chicken is cooking, in a separate pot, boil the plantains for 20-25 minutes or until they are soft.
4.Once cooked, remove the skin from the plantain and mash it properly.
5.Add cinnamon and butter to the mashed plantain and mix well. Then leave the mixture aside.
6.In another pot, add cornstarch, tamarind paste, honey, cumin, red chili powder, black pepper, and paprika.
7.After that, add 1/4 cup of water to the pot and stir all the ingredients until a thick sauce is formed.
8.When the chicken is done, take it out and slice each breast in half lengthwise.
9.Stuff each chicken piece with 2 tablespoons of the mashed plantain mixture.
10.On a baking sheet, place the stuffed chicken breasts and add the tamarind sauce over the top of each one.
11.Bake in the oven for 15-20 minutes or until the edges turn golden brown.
