Ingredients

1/3 cup butter , separated
1/2 cup sugar
1 teaspoon vanilla
1/2 cup water
2 large ripe plantains , peeled and sliced into rounds
2 1/3 cups flour
1/2 teaspoon salt
1 1/2 teaspoons baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup dark molasses
1 cup milk

Instructions

1.Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan
2.In a large mixing bowl, cream together 1/4 cup of butter, sugar, and vanilla until light and fluffy
3.Bring water to a boil in a saucepan and add in the sliced plantains. Cook for about 12-15 minutes. Once done, remove from water, mash, and let cool.
4.Shift together flour, salt, baking soda, ginger, cinnamon, and cloves
5.In a separate bowl, mix molasses, milk, and the rest of the melted butter (1/4 cup). Add the mashed plantains to this bowl.
6.Add dry ingredients to wet ingredients slowly until well combined. Pour batter into greased baking pan and bake for 40-45 minutes, or until a toothpick comes out clean.
7.Allow gingerbread to cool before cutting into squares and serving.
