Plantains are a staple ingredient in many Caribbean, Latin American, and African cuisines. In this recipe, we've turned plantains into crispy chips and paired them with a tangy and spicy mango salsa. Plantains are similar to bananas, but they are less sweet and more starchy. They are typically cooked, rather than eaten raw, and can be served as a side dish or used in savory and sweet dishes. This recipe is a perfect snack or party recipe, and it's a great way to introduce plantains to your diet if you haven't tried them before.

Instructions

1.Slice the plantains on a diagonal and place them into a bowl of cold water.
2.Heat up the vegetable oil in a skillet over medium-high heat.
3.Once the oil is hot, fry the plantain slices in batches, for about 3 minutes on each side, until they are golden brown and crispy. Remove the chips with a slotted spoon and drain them on a paper towel.
4.In a mixing bowl, combine the diced mangoes, sliced scallion, minced serrano chili, minced red onion, and cilantro. Add in the garlic salt and lime juice, mix well.
5.Serve the crispy plantain chips warm with a side of fresh mango salsa.
