Plantain-Bean-Cheese Torte is a delicious and hearty meal that brings together the flavors of Latin American cuisine. A torte is traditionally a savory cake made with flour, eggs, and cheese, but this recipe substitutes plantains and refried beans for the flour. The layers of sliced cheese add a rich and creamy texture to the dish. This meal can be enjoyed as a main course for lunch or dinner, and it pairs well with a side salad or steamed vegetables. The plantain-bean mixture can be prepared ahead of time and refrigerated for up to 12 hours before assembling and baking in the oven.

.Preheat the oven to 350°F.
.Peel and slice the plantains into thin rounds.
.In a separate bowl, beat the eggs and add the flour and baking soda until well combined.
.Add the refried beans to the egg mixture and stir well.
.Grease a round baking pan and place a layer of sliced plantains at the bottom.
.Add a layer of the egg and bean mixture on top of the plantains followed by a layer of sliced cheese.
.Repeat the layering process, ending with a layer of cheese on top.
.Bake for 35-40 minutes or until the cheese is melted and bubbly.
