3 -4 large plantains , riper the better
1 cup sugar
1/2 cup raw cashews
1/2 cup raisins ( soaked )
2 -3 cups milk
1 teaspoon allspice
1/4 cup unsalted butter

Instructions

1.Peel and slice the plantains into half-inch-thick rounds.
2.In a large pan, melt the butter on medium heat. Add in the sliced plantains and stir to coat.
3.Add the allspice and stir to combine. Cook the plantains until they start to soften, about 10-15 minutes.
4.Pour in the milk and sugar and stir to combine. Reduce the heat to low and let the mixture simmer for about 20-25 minutes.
5.In a separate pan, roast the raw cashews until they start to turn golden brown. Set aside.
6.Add the soaked raisins and roasted cashews to the plantain mixture, stir to combine, and continue to cook on low until the mixture has thickened and the plantains are completely soft and cooked through.
7.Serve hot as a dessert or a snack.
