Ingredients

3 cups parboiled rice
1 cup white Urad Dal ( white lentils )
1 teaspoon fenugreek seeds ( methi )
salt
Dosas are a popular breakfast dish in India, particularly the southern regions, and now worldwide. This delicious breakfast treat is made from a batter of soaked and ground rice and white lentils, which are left to ferment for a period of time before being poured onto a hot griddle to form thin, crispy crepes. They are typically enjoyed with a variety of spicy, tangy, and sweet coconut chutney and sambar. When made using the right ingredients and technique, dosas are light, crispy, and packed full of flavor, making them a truly satisfying breakfast option. They can also be eaten for lunch or dinner.

Instructions

1.Rinse the rice and Urad dal several times in cold water.
2.Put them together in a large mixing bowl, add fenugreek seeds, and enough cold water to cover them. Let them soak for at least 4 hours or overnight.
3.Drain the water and grind the mixture to a smooth batter using a blender or a food processor. Start with a small quantity of water while grinding and subsequently add water little by little to ensure a smooth texture.
4.Add salt and mix well. Cover and leave it aside to ferment at room temperature for about 12-24 hours or until it’s risen and light.
5.Heat a non-stick or cast-iron pan to medium-high heat.
6.Ladle the batter onto the pan and spread into thin circles with the back of the ladle.
7.Drizzle an ample amount of oil or ghee around the edges of the dosa. Let it cook for 30-40 seconds until golden brown, then flip and cook for an additional 20-30 seconds.
8.Remove the Plain Crepes (Plain Dosas) from the pan and repeat the process.
9.Serve hot with your favorite chutney, sambar or accompaniment.
