500 g flour
15 g dried yeast
2 teaspoons salt
1 tablespoon olive oil

Instructions

1.In a mixing bowl, combine the flour and salt. In a measuring jug, dissolve the yeast in 300ml of lukewarm water. Add the olive oil to the water and yeast mixture.
2.Pour the water and yeast mixture into the flour and mix until it forms a dough. Knead the dough for 10 minutes until smooth and elastic.
3.Place the dough in a clean, oiled bowl, cover with a cloth and let it rise in a warm place for 1 hour.
4.Preheat the oven to 200°C. Punch the dough down and divide into 8-10 pieces. Roll each piece out to a thickness of about 1cm and place on a greased baking sheet. Cover with a cloth and let it rise for another 10-15 minutes.
5.Bake in the oven for 10-15 minutes or until puffed and golden.
6.Serve warm or cold, sliced in half and filled with falafel, hummus or any other Middle Eastern/Mediterranean dish.
