1 onion , chopped
1 cup green beans , cut into 1/2-inch/1 cm pieces
1 potato , peeled and diced
1 cup carrot , diced
salt and pepper
1 bay leaf
1 sprig thyme
1 cup white kidney beans , cooked
1 cup zucchini , diced small
2 medium tomatoes , seeded , and diced
pesto sauce , for garnish

Instructions

1.In a large pot, heat the olive oil over medium heat. Add the onion, green beans, potato, and carrots and sauté for 5 minutes.
2.Add salt, pepper, bay leaf, and thyme to the mixture. Stir well.
3.Add 4 cups of water to the pot and bring the mixture to a boil. Lower the heat and let it simmer for about 20 minutes.
4.Add cooked white beans, diced zucchini, and tomatoes to the mixture. Simmer for another 10 minutes.
5.Ladle the soup into bowls and garnish with pesto and Parmesan cheese.
