Instructions

1.Preheat oven to 395°F (200°C). Grease six 8 oz (240 mL) ramekins with butter and dust them with powdered sugar.
2.In a double boiler, melt the chocolate, grated chocolate, and heavy cream.
3.In another small saucepan, heat the milk with the vanilla bean and pistachio paste, stirring occasionally until warm and combined.
4.In a large bowl, beat the butter and granulated sugar until light and creamy. Add egg yolks one by one and stir until mixed well.
5.Sift in the flour and cornstarch, and stir until the mixture is smooth.
6.Slowly whisk in the hot pistachio-milk mixture and combine until thickened and smooth.
7.In a separate large bowl, beat the egg whites until frothy and pale. Gradually add in the superfine sugar and whisk until the mixture is stiff and forms peaks.
8.Fold the stiff egg whites gently into the pistachio mixture.
9.Spoon the mixture into the prepared ramekins and smooth the top of each soufflé slightly.
10.Place the ramekins on a baking tray in the preheated oven and bake for 12-14 minutes, or until the soufflés have risen.
11.Serve hot, topped with heavy cream and pistachios.
